I am sooooo envious of all the wall space!! Although we have a room in the basement, it just won't work logistically with all our special food prep. So I use our tiny (TINY!) kitchenette which is well lit by windows. This leaves me with ONE wall! So I try to find tiny laminated maps and charts that fit in our notebooks and can be taken out as we learn about them.
